Description
Produced from old vines, this is a traditional style of Chablis, with a lean, steely minerality.
Chablis uses exclusively the Chardonnay grape variety, the vines grow on limestone soil rich in fossils.
The fruit is whole-bunch pressed, transferred to stainless steel tanks for a cool fermentation with indigenous yeast. Malolactic conversion is completed with indigenous bacteria and the wine is matured on fine lees in tank for 4 months prior to bottling.
Elegant, complex, lively and fruity. There are hints of nuts and honey among the citrus aromas; the medium light palate is softly fruited and dry with refreshing mineral crispness.
Recommended to drink with with fish and white meat and can be kept for 3 to 5 years.
